How to Make this? Here is a step-by-step guide!

Carrot Cake (Bana's Way)

Prep time: 1o mins

Cooking time: 1 hour

​Ingredients:

2 carrots 

1 cup Medjool dates

1 cup rolled oats

1 cup coconut 

1 cup roasted almonds

2 tsp cinnamon

¼ tsp nutmeg

¼ ground ginger

1 tsp vanilla extract 

Dash of lactose-free milk (I used lactose-free as it is my personal preference, but you can use any kind 0f milk you want. Note: Plant-based milk works as well.)

Salt 

 

Glaze:

1 cup cashews

1 tbsp tahini

3 Medjool dates

1 tsp vanilla extract

  1. In a blender, add grated carrots, Medjool dates, coconut, oats, roasted almonds, vanilla, cinnamon, ginger, nutmeg, salt, and lactose-free milk.

  2. Blend until fully smooth.

  3. In a smaller blender, add cashews, tahini, Medjool dates, vanilla extract, and lactose-free milk.

  4. Add the carrot cake mixture into a pan, and put the frosting on top.

  5. Put it in the freezer for 1-2 hours to hold.

  6. For garnishing, add some grated carrots or walnuts.

  7. Finally, Enjoy!
